LAYTON, Utah, July 6, 2026 (Gephardt Daily) — Investigators are looking at fireworks as the possible cause of a fire that destroyed a Layton restaurant.

The Costa Vida Grill fire, at 630 W. 1425 South, was dispatched at 11:54 p.m. Saturday after multiple 911 reports, callers reporting flames were already through the roof, Layton City Fire Department officials said.

A probe by the City Fire Marshal and Layton police is “examining the possibility” fireworks were involved, according to a news release, but the cause remains under investigation.

Damage is estimated as high as $1.2 million to the eatery, making it a near-total loss.

An unusual roof construction complicated efforts by Layton firefighters joined by the Hill Air Force Base Fire Department. A pitched roof overlaid by a flat roof allowed for “concealed spaces” for fire to spread.

“Fire suppression efforts continued for several hours and required large amounts of water and extensive roof operations.

“As conditions deteriorated and a portion of the roof collapsed, incident commanders ordered crews to withdraw from the interior of the structure and transition to defensive operations to ensure firefighter safety.”

Sunday about 8:30 a.m. the site experienced a rekindle, requiring crews to return to squelch smoking remnants in the roof assembly. No injuries were reported.
